Have you every had people drop by for dinner unexpectedly (or with not much notice), and wished you could whip up a fabulous dessert to end the meal?
I was in that predicament the other night, but a mango my son made me buy while out shopping saved the day.
I wasn’t even considering making dessert until my friend asked, with a pleading look in his eye, if there was anything sweet to end the meal?
Not wanted to seem flustered in any way I say “yes, of course!” and ducked into the kitchen. It was then that I spied the mango, and the whole idea took shape in an instant.
I cannot stress how important it is to have fresh cream in your fridge, and bars of bitter-sweet chocolate in your pantry. It is for occasions such as these.
This would have worked just as successfully with peaches, very ripe pears, apricots or berries.
It was so darn good, I wanted to lick the bowl.
You will need: 1 ripe mango, peeled and cut into long thick matchstick slices, 2 tsp lemon juice, 2 oz bitter-sweet chocolate, (60%), 1 cup heavy whipping cream, 1/2 tbs confectioners’ sugar.
1 – Put sliced mango into a bowl and toss with a little lemon juice.
2 – Break chocolate into a small pan or pot and melt on lowest heat.
3 – Put cream into a bowl with the sugar and whip until it thickens.
Serve in sweet little bowls, giving everyone some mango, drizzled with chocolate, and a dollop of cream.
